Oh My CSA! Win a Stay at the Carolina Bed & Breakfast!

Summer is here and with it lots of fresh fruits and vegetables. One way to take advantage of all that is out there and try some new foods is to purchase a CSA share. (CSA stands for Community Supported Agriculture. ) Essentially you purchase a share in the crop from a local farm and every week you will receive a box filled with items from that week’s harvest. Sometimes it can be challenging to know how to use some of these items. Sometimes you may not even know what they are! So here at the Carolina Bed & Breakfast we have come up with an idea to help all of us share in the learning process and have some fun along the way. Oh My CSA! is a recipe contest based on the products in the CSA basket we receive at our Asheville Bed & Breakfast from Full Sun Farm. Every Wednesday starting in July I will post the contents of our basket online. You can enter every week or just once in order qualify for the grand prize: A gift certificate for a stay at the Carolina Bed & Breakfast. Along the way we will hopefully find some great new foods and dishes to enjoy using the summer harvest.

A RECIPE CONTEST SPONSORED BY THE
Carolina Bed & Breakfast
Create an original recipe using an ingredient from the Full Sun Farm weekly CSA box and win a Gift Certificate for a one night stay at the Carolina Bed & Breakfast.
Contest will run for eleven weeks from July 3-September 11, 2013
Contents of each week’s CSA box will be posted on The Carolina Bed & Breakfast Homepage (www.carolinabb.com) as well as Facebook and Google+ pages on Wednesday afternoons. (https://www.facebook.com/Carolinabedandbreakfast , https://plus.google.com/+CarolinaBedBreakfast/posts )
Recipes must use one or more of the posted ingredients in order to qualify
Recipes using that month’s ingredients must be submitted by midnight on the last day of the month.
One entry per CSA box (to a total of 11 entries per contestant).
Recipes will be judged on creativity, use of the CSA ingredient and taste. The use of more unusual and difficult ingredients will be weighted more heavily (i.e. kohlrabi and mustard greens are better than tomatoes and strawberries!)
Photos of the completed recipe are not required but are requested. Winning recipes and photos will be posted on the Carolina Bed & Breakfast Blog (www.carolinabb.com/blog)
Monthly winners will receive a copy of “Recipes from a Big Family” by Susan Hinkle Murray and will be considered for the Grand Prize (A Gift Certificate for a One Night Stay at the Carolina Bed & Breakfast)
Monthly winners will be announced on the 15th of the following month and the Grand Prize winner will be announced by the beginning of October.

* Community supported Agriculture: A share is purchased in the harvest of a local farm which is delivered weekly. Contents of the box depend on what the farmer has planted and what is ready to harvest.
Finally to get you started, here is a recipe (not original sadly) using Garlic Scapes which were in this week’s CSA box.
BACON WRAPPED GARLIC SCAPES*
12 six to eight inch long tender pieces of garlic scapes
12 pieces thin cut bacon
Tightly wrap each of the scapes with one piece of bacon, spiraling down the scape as you go.
Heat a heavy skillet over medium heat and add the scapes. Cook the scapes until the bacon has browned on the first side (1-2 minutes) then turn and cover. Continue cooking until the scapes have softened and cooked and bacon is crispy and brown.
* Garlic scapes are the top of the garlic plant. I have never seen them in a grocery store. They only seem to show up at a farmer’s market or in a CSA box. I suppose you can use them raw but do so sparingly if you do. They have a strong flavor raw but when cooked they get a nice nutty, vegetable-type taste. I have to admit I was dubious about them but this recipe was a big hit with everyone.
