Saltine Toffee Bars

> One of the things I love to do is bake.  And owning a bed and breakfast gives me an excuse to do plenty of it!  At the Carolina Bed & Breakfast we always put some form of dessert item in our guests’ rooms while they are out at dinner. (James and I have never been able to figure out exactly what to call this.  He favors “treats” while I tend to call it a “sweet”.  They are more than cookies, but less than a full fledged dessert.) 

Anyway, I was attracted to this recipe because of the Saltines.  Caramel is one of my favorite sweets and caramel and salt is a classic flavor pair. This looked easy and yummy. With a few adjustments it turned out to be exactly that.

 1) Preheat oven to 400 degrees. Line a cookie sheet with saltines. 

The recipe doesn’t call for any particular size of cookie tray and I fooled around with a couple before deciding on this one:  10″ x 13″.  However, the next time I make it I am going to use a slightly smaller pan so I get a thicker layer of toffee.  The recipe also didn’t say anything about preparing the pan.  I decided to line it with foil so I could lift the whole thing out and put it on a cutting board when it was time to cut it into bars.                                          

2) Place 1 cup of unsalted butter and 1 cup of brown sugar in a saucepan over medium heat.

3) Stir together until blended and bring to a full boil. Boil for 3 minutes.                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                     
4) Immediately pour the hot caramel over the saltines and spread to cover the crackers completely. 

You can see how this would work better in a smaller tray where the crackers fit more exactly.

5) Bake for 5 to 6 minutes

 6)  While this is cooking, prepare 2 cups of chocolate chips and 3/4 cups of chopped nuts.

I used pecans but you can use any nut you like!


     7) Remove the bars from the oven and immediately sprinkle with the chocolate chips. Then leave it to sit for about five minutes.  The heat from the bars will soften the chips so you can spread them easily.                                                                        

 

 7) With a knife or spatula, spread the chips evenly over the bars and sprinkle with the chopped nuts. 

 8)  Cool completely in the pan.  You can put it in the fridge for half an hour if you want to speed it up. When cool, lift the bars out of the pan and remove the foil.  Cut along the lines of the crackers to make bars.
